This Saturday we celebrated Mother's Day with my husband's Mom.  We had her two adopted kids, her significant other, and my sister-in-law over for dinner.  The tricky thing is I love to make homemade food for my family but that's been tough while I've been so sick!  I woke up early to get the groceries and cooked until about 1:45 pm.  I don't know how some people cook from scratch on a daily basis!  Thankfully I had my husband to help me and together we were a great team.  He deal with the pork in the crockpot while I made homemade macaroni and cheese (with light velveeta) and together my hubby and I made a blueberry pie with reduced sugar.  Everything actually turned out great!  In fact, my Mom is a homecooking nut and I feel that she is a great critic to help me improve with my cooking.  The following day she tried the pie and it was a hit.  She was commenting on how this pie must've made her gain ten pounds between all the sugar and butter.  But, I was excited to explain that the pie had no butter and half the sugar the recipe called for.  In fact, if you really want to go low-fat don't eat the crust; just eat the filling.

SATURDAY

Breakfast -

1 packet no sugar-added oatmeal with 1/4 cup organic raisins

1 Banana

1 cup fat-free organic milk

Lunch -

Cedarlane Bean & Cheese Burrito

Carrots

Fat-free yogurt

Snack -

2 clementine's

Dinner -

2 oz. pork in a honey mustard sauce

Spoonful of low-fat macaroni and cheese

Salad (mixed greens, tomatoes, croutons) 2 tbsp. light ranch

Snack -

Spoonful of blueberry pie filling with 1 tsp. of light cool whip
