Along with well wishes for a Happy New Year, I received...a head cold.  Nothing is better for a cold than homemade chicken soup.  The canned variety is quick to prepare, but I haven't found one under 580 mg. of salt and most hover around 850 mg. of slat per serving.  Yikes!

I looked into the best chicken broth to add a bit of caramelized onion,carrots, peas, chicken breast and a bit of celery.

In the November issue of Real Simple magazine, they compared pre-made chicken broth.  Their results were that Wolfgang Puck, all natural chicken broth is best for soup.  Trader Joe's Organic low-sodium chicken broth is the best low-sodium variety.  The best bargain is the Better Than Bouillon Reduced Sodium Chicken Base ( I use this when steaming broccoli, asparagus, or spaghetti squash amoungst other veggies, in the microwave).  Best single use chicken broth is Pacific Natural Foods Organic Free Range Chicken Broth.  The best 'all around' broth is Kitchen Basics Natural Chicken Cooking Stock.

I like to ass a long fresh rosemary stalk while I'm making my homemade chicken soup.  Mix. Match. See whats in your pantry.  Enjoy!

Breakfast-

Apple (67 cal)

3/4 egg whites, 1 cup spinach(100 cal) 

whole wheat toast, 1 tbls. no sugar added jam (100 cal)

A.M. Snack-

1 apple (59 cal)

12 organic, roasted no-salt almonds ( 120 cal)

 Lunch-

4 oz  (240 cal)

Salad- 2 1/2  cups romaine, 4 cherry tomatoes, 1/2 cup green beans, 4 asparagus spears (68 cal)

P.M. Snack-

1/3 cup non fat yogurt (40 cal)

1/8 cup non-fat cottage cheese(30 cal)

3 tbls blueberries (20 cal) 

Dinner-

5 oz ( 170 cal)

1/2 cup (150cal)

1 cup steamed  (40 cal)

TOTAL CALORIES- 1204
